Got some leftover spuds? Try this delish Thai Potato Curry recipe

We love a good spud!

 

It’s no secret that potatoes are tasty, versatile, and simple to prepare, but did you know the spud is packed with nutrients and antioxidants?

Believe it or not, they’re an excellent source of many vitamins and minerals.

It’s always handy to have a bag of potatoes in your home, they're easy to batch cook ahead of time leaving you prepared for the week ahead.

Re-using leftover mash and boiled potatoes reduces food waste and can be used in a host of tasty dishes too!

This week Dave and Fionnuala teamed up with Bord Bia who have released a list of incredible potato recipes on potato.ie as part of their campaign, 'Potatoes: Prepare to be Surprised'.

THAI POTATO CURRY

What you’ll need :

  • 4 large potatoes (e.g. Rooster potatoes) (approximately 800 g)
  • 1 large onion
  • 1 bag coriander
  • 1 clove garlic
  • 350 ml coconut milk
  • 1 tbsp sunflower oil
  • 200 g butternut squash
  • 1 parsnip
  • 1 tbsp red curry paste
  • salt and pepper

Method:

  • Chop the onion and garlic and cut the potatoes and all other vegetables into 2 cm pieces.
  • Heat the sunflower oil and stir-fry the vegetables.
  • Add the curry paste and season to taste with salt and pepper.
  • When the vegetables are tender (about ten minutes) add the coconut milk. Leave to simmer for a few more minutes.
  • Add the shredded coriander just before removing the curry from the heat.

That should give you plenty to eat for four people! Any leftovers store in the fridge.
